Smoking and Grilling Chicken

Smoking chicken is a little different than beef and pork. Chicken needs to be cooked at a higher temperature. When smoking chicken, I like to run the temperature at about 275 to 285.


Chicken is a naturally tender meat so it does not need the longer cook time. I like to marinade chicken in Italian dressing for no less than 4 hours or overnight if possible before smoking, it just gives the meat an amazing flavor and helps keep the chicken moist.


After the chicken has been marinated, I will season it with Slap Me That’s Good Chicken Seasoning, make sure you coat both sides of your chicken generously. Place the chicken on your smoker or cooker.


You will need to cook until it reaches and internal temperature of 175 to 180 degrees. Chicken does not need to rest so when it reaches the correct temperature, it is ready to be served.
